As an additional note some kitchens and certain areas are also required by local laws to have a fire blanket. Fire blankets work for many different purposes, but the two main are A, to be able to smother a fire by eliminating the oxygen source without spreading, say, the oils or the spreadable fuels that we're actually trying to extinguish. Another purpose is that it may work as a blockade to be able to prevent fire from reaching out from where it sources at so that people can escape. Again, refer to your local law enforcement for fire safety and your employer handbook. The demonstration for how to use a fire blanket, say, in a kitchen situation, is to unfold the kitchen fire blanket completely. Hold the blanket up and then in front of you. And then drop the blanket over the burning substance on the stove as you step away quickly, so as to not get any of the burning substance on yourself. Then make your way to a place of safety, and be sure to call 9-1-1 and the fire department immediately.
Some areas, like a commercial kitchen, may be required to have fire blankets. They are perfect for grease fires, as they will not spread a grease fire; it will simply extinguish it with a smothering action and in doing so will protect the user from burns.
